Sautéing a combination of white onion and red bell pepper adds a ton of flavor to the scrambled eggs while creating a nice crunch factor. You can use any color red bell pepper.
Fresh garlic will add a ton of flavor, but you can also use garlic powder if desired.
I prefer to use pastured raised eggs which have a bright orange yolk and naturally have more nutrients. But any egg will do just fine.
Feel free to use any type of tortilla that you desire. I used carb savvy whole wheat tortilla from Trader Joe’s, but I have also use corn and flour for these in the past. All taste amazing with this recipe so it’s really up to preference.
Finish these tacos off with a touch of pepper jack cheese for a touch of spice and added flavor. You can also use mozzarella cheese, Monterey Jack cheese, cheddar cheese or any cheese that is desired.
Complete these tacos with a slice of avocado, fresh cilantro and a drizzle of sriracha.
How To Make
ONE: Start by sautéing the onion, red bell pepper and garlic on the stovetop with a touch of extra virgin olive oil or butter.
TWO: In a bowl, add in the eggs and use a fork or a whisk to scramble the eggs. Pour scrambled eggs into skillet and use a rubber spatula to turn eggs every few seconds. These will cook fast. Remove pan from heat while you warm the tortillas.
THREE: Add tortillas to another skillet and heat over medium heat. Then, assemble tacos by adding the egg mixture into each one, followed by the pepper jack cheese, avocado slice, a touch of flakes sea salt, black pepper and a drizzle of sriracha. Enjoy!
